These almond biscuits are a real crowd pleaser and so easy to make! They originated in Italy, and are also known as "cantucci". The shape and crunch is what make them unique. Captain likes to dip them, I don't - what's your preference?

- 10 oz plain flour
- 7 oz fine sugar
- 1 tsp baking powder
- ¼ tsp salt
- 2 tsp vanilla essence
- 3½ oz whole blanched almonds
Pre-heat oven to 300°F (150°C)
Grease and flour 2 baking sheets
Mix dry ingredients together in a large bowl
Whisk eggs and vanilla essence together and stir into the dry ingredients
Add the almonds and stir them through the dough. The dough will be sticky (wet your hands)
Divide dough into two loaves about 25cm long and 5cm wide
Bake for 30-40 minutes until pale golden
Remove from oven and slice immediately into thin pieces (1cm wide)
Lay slices back onto the trays and cook for a further 10-15 minutes. Turn them over and cook for another 10-15 minutes
Remove and allow to cool
